ZUCCHINI CRUST PIZZA

Ingredients

FOR PIZZA

2 large Eggs
2 cups Zucchini; shredded and squeezed dry
1/2 cup Mozzarella cheese; shredded
1/2 cup Parmesan cheese; grated
1/4 cup All-purpose flour
1 tbsp Azafran Extra Virgin Olive oil infused with garlic
1 tbsp Basil; minced
1 tbsp Thyme; minced

FOR TOPPINGS

350 g Red peppers, cut in strips
1 cup Mozzarella cheese; shredded
1/2 cup Chicken/ Veg Pepperoni; sliced

Preparation

Preheat oven to 450°F. Blend all the pizza ingredients and spread it into a 12” pizza pan.

Bake for around 15 minutes until golden on the edges. Reduce oven settings to 400°. Add the toppings and bake for around 10 to 12 minutes until the cheese is melted.

Cheese variations Mozzarella Cheese is the most common cheese for pizza. However provolone, cheddar and parmesan cheese also make tasty combinations.

How to remove water from Zucchini?

Add the shredded zucchini to a colander. Sprinkle it with salt and let it sit for 20 minutes. Pat dry with a paper towel.
